Big & Fluffy Homemade Pancakes

- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 3 teaspoons granulated sugar
- 1⅓ cups buttermilk (or substitute made with 1⅓ cups whole milk and ⅛ cup white vinegar)
- 1 egg
- 1 Tablespoon vegetable oil
- Preheat a griddle.
- In a medium mixing bowl, stir together the flour, baking powder, baking soda, salt and sugar.
- In a 2-cup liquid measuring cup, pour in the buttermilk. Add the egg, and lightly beat together. Add the vegetable oil and stir.
- Pour the liquid ingredients into the dry. Mix together with a whisk spatula, or wooden spoon, until all the ingredients are thoroughly combined.
- Pour by ½ cup onto the heated griddle, and cook for 1-2 minutes per side and the pancakes are golden brown.
- Keep pancakes warm in a 200 degree F oven until ready to serve.
Double or triple the recipe for a larger crowd. Serve with any of your favorite pancake toppings - maple syrup, sliced fresh fruit, whipped cream.
